Sunday Night Dinner Pork Tenderloin!

Sofrito Lovers,

As you all know, I'm a Weekend Top Chef and no one throws down the Sunday night dinner gaunt let like I do.  Last night, I prepared a mouth-watering roasted pork tenderloin that would bring Gordon Ramsey to his knees.

First, I must give credit (and a shout-out) to Natashas Kitchen (an outstanding cooking channel on YouTube) for the inspiration.  Her recipe for pork tenderloin served as the foundation for my own.  I followed her instructions to the tee, substituting Adobo instead of salt.  I also added one packet of Sazon and 1 tsp of onion powder to the dry rub.  I can't help it, I'm Puerto Rican!  I need Sazon and Adobo in all my food.  It's a miracle I don't sprinkle them into my water or on my donuts!

Other than my minor Boricua additions, the spice blend and cooking methods are the same.  Follow this recipe, and you will create a succulent and savory piece of pork tenderloin that will impress your family.  I paired it with a delicious arroz amarillo (Yellow Rice) and a spring greens, tomato, red onion, and cucumber side salad.  My finicky partner, David, loved it and asked me to make it again as soon as I could.  As always, his praise is priceless!

Go taste for yourself!  ¬°Buen Provecho!
