Recipe for Tacos a La David


Sofrito Lovers,


Some of you are asking: What the hell is Tacos A La David?  You have every right to be curious and confused, but allow me some time to explain the origins of this incredible delicacy. And, I'm sure you'll love them as much as my partner David does.


Tacos A La David is a simple recipe that combines Mexican taco seasoning (with my own twist) with the vegetables that my picky partner David enjoys.  By no means is this an authentic taco recipe; it is my brainchild through and through. 


David told me that he loves that the Spring Mix gives a bitter note to the dish and that the taco mix cheese is tangy and salty.  He prefers ground beef, but also enjoys ground turkey-which I used because we all need to eat healthier.  He also prefers my special homemade taco seasoning mix to any of those box taco set seasoning packets-high praise, indeed!  He grew up eating charred tortillas, so I learned to make them, they add a fantastic smokey flavor to the dish.


Cooking for the pickiest eater in the world isn't easy, so when I create a recipe he thinks is delicious, I feel the need to share it with the world.  Maybe, your picky eater at home might enjoy it-Who Knows?  Give it a try and let me know if they like it!

Ingredients for my Mexican Taco Seasoning:

1 Tsp Garlic Powder

1 Tsp Onion Powder

1-1.5 Tsp of Finely ground Himalayan Pink Salt

1/2 Tsp Black pepper

1/2 Tsp Cumin

2 Tsp Chili powder

2 Tsp Dried Cilantro

2 Tsp Smoked Paprika

Taco Ingredients:

2-3 plump Roma Tomatoes

1 small Red Onion

Spring Green Mix

1 Lb Ground Turkey

1 16oz bag of Shredded Taco Cheese Mix (Sargento is our favorite)

3-4 Tortillas

1 Tsp of olive oil

1 Tbsp Tomato Paste

1/2 Cup of water (maybe more if you want it saucier)

Directions:

1. Mix the Taco seasoning together in a bowl and set aside.


2. Chop the tomatoes and red onion into small pieces and place in serving bowls.  Remove the Spring Mix and place on a plate or bowl, wash if you wish.  Open the Shredded Cheese mix and place in a serving bowl.  These veggies and cheese will be your taco toppings.


3.  In a large pan, heat the olive oil (medium heat) and then add the ground turkey.  Brown the meat until half way done and then coat in Taco seasoning.  Mix the turkey and seasonings until the turkey is fully cooked.  Add the water and tomato paste, mix, and heat until the water boils.  Once boiling, lower the heat to low, cover, and cook for 10 minutes.


4. Turn a stove top range on medium low and char your tortillas over the open flame.  Use tongs to flip the tortillas to get an even char on both sides.


5. Once your tortillas are charred and your meat is cooked, you can assemble your tacos.  Add your veggies and whichever taco sauces, hot sauces, or sour cream you like.
