Sofrito in my Soul

Sofrito Lovers,

Every Sunday night, I dazzle my partner's taste buds with a home cooked meal.  Usually, I like to show off and show out, but occasionally, I need to keep it simple.  This past Sunday night, I prepared a wonderful Rachero Beef with Potatoes, and it knocked my Bear's socks off.

The recipe below is from Simply Mamá Cooks, one of my favorite Mexican-Korean YouTube cooking channels.  You can never go wrong with Mamá recipes, she puts her foot in it every time.
