Rabo Encendido/Dominican-style Oxtail Stew.

Yes, yes, yes, I'm inconsistent and half-assing my blog- I recognize and acknowledge it!  I'm going to do better!


I bring you another recipe from the culinary goddess herself, Chef Zee Cooks!  I prepared her amazing Dominican-style Oxtail stew and it was incredible.  The oxtails were tender, flavorful and definitely worth the wait...the long wait.  This was one of those times where patience has its rewards!


All the rumors you've heard are true: Oxtails take a long time to cook.  In order to make this delicacy, I had to invest 3 hours of my time, patience, and focus.  Oxtails are not for the timid or easily distracted, but when you hunker down and commit, then you're rewarded with something truly spectacular- if I do say so myself!


Check out the video below and try your hand at it.  As per usual, Chef Zee's teaching style imbues you with confidence and a sense of adventure.  She's clear, concise, and relays her instructions in a timely manner.  I encourage you to watch the video and, trust me, you'll see why I call her a culinary goddess!
