Happy Black History Month!  Today, we explore the remarkable history of Hoppin' John- a classic Gullah GeeChee dish.


Hosted by Chef BJ Dennis, this wonderful video explores the  history of Hoppin' John and how this delicious dish evolved within the African Diaspora.  Since I was a kid growing up in Harlem, I have loved this dish.  It's savory, full of fatty pork, and the soggy collard greens are to die for!



Food never ceases to amaze me.  Every ingredient in this dish speaks to the history of how African slaves survived and adapted to the heinous conditions they were subjected to in this country.  It's truly a testament to creativity, strength, and resilience.
